Ingredients :
- 3 cups cold leftover mashed potatoes
- 1 cup shredded Cheddar cheese
- 2-3 green onions, sliced
- 4 slices bacon, cooked crisp and crumbled
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 3 eggs
- 1/4 cup water
- 2 cups seasoned breadcrumbs
- Vegetable oil, for frying
Instructions :
- In a large bowl, combine cold mashed potatoes, cheese, green onions, bacon, garlic salt and pepper. Mix well.
- Shape into 1-inch balls. Refrigerate for at least 30 minutes.
- In a medium bowl, whisk together eggs and water. Place breadcrumbs in a shallow dish.
- Heat 2 inches of oil to about 275 degrees, in a large Dutch oven or deep saute pan.
- Fry potato balls, 5-6 at a time, until golden brown, about 2-3 minutes. Drain on paper towels. Serve warm.
